From Baird Maritime:
The sheatfish (Siluris glanis) is the largest freshwater fish in Europe. Examples have been as long as five metres and weighed up to 200 kilograms.
A branch of the "catfish" family they are farmed in France and other parts of Europe. Related species are also intensively farmed in the United States and Asia. They produce a high yielding rather bland, but highly saleable flesh.
This useful collection of papers provides a very clear and well-illustrated overview of the process of farming this interesting branch of the seafood industry.
